Tuscan Kale & White Bean Soup
The holidays are over and I am ready to focus on cooking everything that makes me feel cozy, mainly soups and winter veggies! And of course, since it is a new year I am trying to focus on eating more plants. I was watching a tv morning show and one of the recipes they were making was a kale and bean soup… I wanted to make it right away! But, I couldn’t find the recipe. I took a little from a bunch of recipes and put this together. It was so simple. I prepped before Z got home from work, and when he got home I started actually cooking and it only took 30 minutes.
Ingredients:
2 tablespoons of olive oil
1 onion chopped
2 cans of cannellini beans (rinsed and drained)
4 cups of vegetable broth
2 cups of water
one bunch of Tuscan kale torn into pieces and stems removed
salt and pepper
shaved parmesan cheese
Directions:
Heat oil in 3 QT pot and add onion. Cook a few minutes until soft.
Mash one of the cans of beans.
Add beans, broth and water into pot. Bring to a boil.
Add remaining whole beans, kale, 1 tsp of salt, 1/4 tsp of pepper.
Stir and reduce heat. Partially cover and simmer about 25 minutes.
Spoon into individual bowls and sprinkle shaved parmesan cheese on top! Season with salt and pepper.
